A traditional Italian wild fennel grown for its aromatic leaves, flowers, pollen, and seeds! Finocchio Selvatico is a highly fragrant fennel variety prized throughout Italian cooking for its distinctive flavor and versatility.
Unlike Florence fennel, this variety does not form a bulb. Instead, the plant produces delicate feathery fronds that can be used to flavor fish, soups, sauces, and other dishes. Its abundant yellow flowers produce intensely flavorful fennel pollen, a prized ingredient in Italian cuisine.
As the flowers mature, they produce highly aromatic fennel seeds with a clean, strong flavor. The seeds are traditionally used in sausage and are excellent for seasoning breads, meats, sauces, and other dishes.
The vibrant yellow flower clusters are also attractive in the garden and can be harvested as cut flowers.
