A fast-growing, highly aromatic annual herb from the celery family, distinguished by its hollow stems and exceptionally delicate, feathery blue-green fronds. Fresh dill weed is prized for its bright, herbaceous flavor with subtle notes of anise, citrus, and celery. It is an essential component of authentic potato salads, seafood dishes, and creamy dips like tzatziki, and is famously used to flavor pickles. While young leaves are best, the entire plant is edible, including the stems, and it will develop flat umbels of tiny yellow flowers followed by brown seeds.
