A classic Italian salad green with fresh, peppery flavor! Known as rucola in Italy, arugula has been cultivated since Roman times and remains a staple of Italian cuisine.
The tender leaves are delicious in salads, dressed simply with olive oil and salt, added to sandwiches, or wilted over hot pizza and pasta just before serving. Arugula can also be used to make a flavorful pesto and is an excellent cool-season alternative to basil.
This cultivated arugula is a fast-growing variety that can be ready to harvest approximately 30–40 days after direct sowing. The flavor tends to be milder during cool weather and becomes increasingly peppery as temperatures rise. For the best combination of flavor and tenderness, harvest young leaves when plants are approximately 4–6 inches tall.
Arugula performs particularly well in cool weather and tolerates low temperatures. For a continuous supply, sow new seeds every 2–3 weeks throughout the growing season.
